Loxodonta (pron. Locks-ah-dawn-tah) is the taxon name for elephant and the complexity of this Barrel Aged Imperial Stout is just as large! You’ll immediately notice intense flavors of chocolate fudge, oak, vanilla, molasses, praline, and coffee cream. The base beer was originally brewed in 2020 before spending one year in a mix of Bourbon and Rye whiskey barrels from Laws. This is the inaugural release of what we aim to make an annual tradition during our half-birthday celebration every January.

Ice Cutter Kölsch 5.2% ABV | 25 IBU
Silver medal winner at 2019 GABF. In the winter after Thomas Sloan flooded his farm, he would cut ice from the lake and sell it to local breweries. As most brewers in the day were of German descent, a Kölsch style beer could have been produced. Our Kölsch is a classic interpretation of the style, very smooth & drinkable like a lager with a light fruit flavor from ale fermentation. It has moderate levels of bitterness and noble hop flavor & a crisp, dry finish. Nothing pairs better with our lakeside view than our Kölsch.
Schwarzy Schwarzbier 5.3% ABV | 32 IBU
Schwarzbier literally translates to “black beer” in German, but this black lager is much lighter in terms of mouthfeel and flavor impact than its color implies. A dark bread character with a surprisingly small amount of chocolate and roast come from the malt, while Hallertau and Tettnanger hops provide pleasant floral and earthy flavors with a touch of herbal spiciness. Lager fermentation accentuates the malt flavors while finishing clean and keeping the drinkability high.
Doontoon Scottish Export 4.8% ABV | 20 IBU
You'll want to sing about this Scottish Export Ale. Two types of crystal malt and a dash of chocolate malt provide ample bready, biscuity, and caramel character with more subtle flavors of apricot, fruit leather, plum, brown sugar, and cocoa. A classic Scottish yeast finishes clean and keeps the focus on the malt, while English hops add just a touch of earthiness. When you're alone and life is getting you lonely, Ye kin always go, Ach! Doontoon!
Monk in Public - Belgian Tripel 8.4% ABV | 30 IBU
Our Belgian Tripel is made with a few simple ingredients, yet is beautifully and deliciously complex. A famous Trappist yeast helps to add pear, apple, honeydew, and light peppery spice, while Belgian Pilsner malt and a combo of Tettnanger and Saaz hops provide a grainy sweetness and balanced bitterness. You'll notice a gentle warming after each sip, reminding you to sip and savor this higher ABV ale.
Ah, Ale Yeah v.13 - Hazy Pale Ale 5.2% ABV | 35 IBU
This is the thirteenth in a series of experimental hop-forward American Pale Ales. The plan is to play around with different hop combos, malt compositions, & water profiles. This particular version focuses on a blend of Mosaic, Talus, and Amarillo with strong flavors of strawberry, pineapple, orange, and peach. The mash includes 15% oats which help provide a very luscious mouthfeel. We’re sure that after your first sip, you’ll say “Ah, Ale Yeah!”
Fluff Capacitor Hazy IPA 6.8% ABV | 45 IBU
Buckle up your seatbelts and get ready for a wild ride, because the Fluff Capacitor hits like a lightning bolt with juicy goodness. Mosaic, Strata, and Amarillo provide ample candied peach, mandarin orange, grapefruit rind, and mango flavors that are delicious on all sides of the space-time continuum, while a silky smooth and fluffy mouthfeel may very well lead you to exclaim “Great Scott!”
Knight Time Golden Stout - Collab with Mojave Brewing 5% ABV | 25 IBU
We lost a bet to our friends at Mojave Brewing when the Knights beat the Avs in the playoffs. To pay our debt, we had to brew this Golden Stout, brewed with cocoa, coffee, coconut, and vanilla. We also have to fly their flag in the taproom until the beer runs out, so help us take that down as soon as possible by drinking lots of this beer!
Nice Porter 6% ABV | 35 IBU
Have you been Naughty or Nice this year? Nice is a Vanilla Robust Porter, created with vanilla beans from Madagascar. The vanilla is sweet, with bourbon and molasses character as well, and it combines beautifully with the porter to create an enjoyable dark ale. This holiday porter will no doubt make everything merry and bright. It’s the holiday season and it pays to be Nice.
Joyride Double IPA 9% ABV | 100 IBU
Calling all Hop Heads, this beer is for you! We use 4.5 pounds of hops per barrel to give our Double IPA an aggressive and delicious hop profile. Four different types of American and German malts are used, but the hops are definitely the star here. Seven different additions of Simcoe and Citra hops layer piney, citrus, tropical fruit and melon flavors into this dangerously drinkable ale.
"Naked" Loxodonta Imperial Stout -2020 12% ABV
Loxodonta (pron. Locks-ah-dawn-tah) is the taxon name for elephant and the complexity of this Imperial Stout is just as large! You’ll immediately notice the cocoa, roast, and molasses flavors, with a dark chocolate character similar to a mocha or chocolate mousse. As it warms, more subtle flavors emerge, with honey, fig, praline, and light cherry. It has an assertive bitterness from CO grown CTZ hops to prevent it from being too sweet. Very limited supply as over 80% of this batch went into bourbon barrels.
Veritable Riot - Pre-Prohibition style Pilsner 5.7% ABV | 30 IBU
In the Spring of 1908, Edgewater became the first city in Colorado to vote themselves dry. The Colorado Transcript reports that the night before Prohibition went into effect a “veritable riot” occurred during the closing of the Golden Gate Saloon, including the severe beating of Edgewater Mayor C.E. Spicer. We brewed this beer to be similar to the type of Pilsners that were served that night, using Colorado grown barley, corn, German hops, and German yeast. Grainy with a hint of corn, and an earthy, herbal, and floral hop character.
Ocho Hundo Smoked Helles 4.8% ABV | 30 IBU
We decided to make our 800th batch a smoked Helles because our brew team is “en fuego” right now. A base of 60% beech smoked malt from Germany adds a campfire-like smoky character that is unmistakable but not overwhelming, while also providing honey, cracker, and umami-like undertones. Try it with BBQ, bratwurst, and smoked salmon, or enjoy this exquisite brew on its own.
Abbey Road - Belgian Dubbel with Tart Cherries 7.1% ABV | 15 IBU
We originally brewed this for our 2016 Beatles series, but decided to bring it back! The two sides of the album are very different, with the 1st containing fantastic full songs, and the 2nd merging short & incomplete songs in a famous medley. To match, we brewed a house favorite, “Defiance Dubbel”, & added tart cherry purée. The result is a loving combo of fruit & spice. “And in the end, the love you take is equal to the love you make.”
Cosmic Tangerine Sour 4.7% ABV |5 IBU
Prepare your tastebuds for blast off! Cosmic Tangerine was soured with two types of Lactobacillus before being heavily fruited with real tangerine. A soft lemon undertone mixes in to complete this refreshing sour ale.
The IPA Experiment #22 6.5% ABV | 50 IBU
For this experimental series, we play around with some of the hottest hops on the market in order to make delicious west coast style IPAs. The twenty-second in the series was brewed with Galaxy, Citra, BRU-1, Cryo Pop, Idaho 7, and Centennial. Look for notes of mango, lemon, pine, and bubble gum, with some light floral undertones. This is a series we’re planning to keep hoppin’ for some time.
Fall Risk Hazy Double IPA 8.3% ABV | 50 IBU
Have you ever fallen over for a beer before? Get ready to with this hazy double IPA. Primarily hopped with Nelson Sauvin hops from New Zealand with small touches of Mosaic and Cryo Pop for flavors of passionfruit, ripe mango, pine, Pinot Grigio, and pear. Between the hop flavors and soft mouthfeel you won’t notice the higher ABV, so be careful when you stand up!
Naughty Porter 6% ABV | 35 IBU
Have you been Naughty or Nice this year? Naughty is a Cherry Chocolate Robust Porter, using sweet cherry purée and pure liquid cocoa from Ecuador. These ingredients are the perfect compliments to the chocolate and caramel flavors of the porter. This special release was designed to bring holiday cheer, so remember, it’s okay to be naughty every once in awhile!
Suspicious Circumstances Baltic Porter 6.8% ABV | 25 IBU
This big & bold lager was brewed with 9 different malts which helps create a rich complexity that you'll want to savor. Chocolate liqueur, toffey, coffee, and toasted hazelnut flavors are all present, with additional complexity showing as it warms. Lagered for 7 weeks to allow for an exceptionally clean finish. There's something suspicious going on here, and it happens to be delicious.

Only brewed a few months ago, you'll notice this version will have more bitterness and roast qualities compared to the other two. Very limited supply as over 80% of this batch went into bourbon barrels.
